Let's say, you emote: *Checks his watch* or *Checks his watch, as if waiting for something or someone* The first one could be understood in several ways in plain text, but if you actually saw someone checking their watch in flesh, you could pick up hints on their intentions for checking the watch. Do they just wanna know what time it is or is there another intention? But then there's the things people wouldn't guess to think about by your body postures and other behaviour. Like the smirking under the helmet, unless it's affecting your voice in a noticeable way.
I agree with your first part, but I think you miss my point. I don't think it's any problem to convey stuff that the characters wouldn't know or would have to know, because I am not just providing the necessary information to other players so they can know how their characters would react; I am also trying to entertain them.
Mind, I am not saying that this style of being hardcore into describing the world as it appears to the senses is not entertaining or anything, I am just saying it's not the only style.
I like to e provided with extra information that my characters doesn't get, if it doesn't relate to anything important that would be harmed by metagaming.
A bard *Pondering what would rhyme with 'Ogrillion'* is a bad example, because it's not entertaning. But still, I hope you see what I mean.

When people are smiling as they speak, the intonation of their voice changes.
When a character I have is wearing a helmet and is smiling but won't remove the helmet, I usually write:
*The smile on his face/lips can be easily noticed by the tone of his voice*
or
*There's a hint of a smile on his voice*
Though I wish I was able to describe what the "smiling voice" would sound like.
I never tried doing this in flesh, but if one speaks while smirking there will probably happen a change on the intonation of the voice, too. And it would probably sound different than a regular "smiling voice".

Whilst that's true, and may be noted by some characters in the realm; giving information that isn't necessary is drawing the subversed subtext to the surface.
The mystery, the implicit and the unknown qualities of how a character feels about that character is then surfaced and the player, however conscious or subconscious it may be, will draw back and be aware of such disposition.
I would liken the similar topic to hostiling an opponent, once they've been hostiled, no matter how conscious or subconscious it is, they will be preparing for a possible fight. Heck! They may even have clicked on the spell and are hovering their mouse over you just in case you make a move.
But, you may do as you wish, i'm merely adding on to what Nekhy and Wyjyn have said.

Sometimes I take advantage of emotes, but by and large I really enjoy sticking purely to dialogue with no emotes, mostly for experimental reasons. Although I am more than capable of peppering and flavoring my in-game posts with non-verbal actions and descrptions, it is very amusing to me to incorporate none of the above, and then to see how people react to the flat dialogue, particularly flat dialogue that can be interpreted in different ways depending upon the tone and the body language. That said, people will interpret it how they want to, not necessarily how I want them to, so the responsibility for feeling slighted, or the elation at feeling praised, is entirely upon them.
I do this intentionally for both IC reasons and OOC reasons, but regardless I think both are valid.
Of course, when a DM has the reins, and I'm involved with other players in trying to tell a large, collaborative story, this is where you might see more emotes coming out - for my own personal enjoyment. And if you take enjoyment from it, too, well, yay.

Now that I've bewailed that, regarding emotes. There are a couple of emotes you should never ever write under any circumstances: *Turns head towards so-and-so,* or *walks away*
And don't worry about DCs. They start coming when you stop trying to get them

I've found I get DCs equally as often from my good characters neutral characters and evil characters, so just pumping out Pally's isn't your answer - it's quality of RP that matters, not style.

When I first came to the server with Lyle 1.0, there was a good, six month period (probably longer, actually) where DCs were a rarity. I think I earned maybe 3-to-5 over the course of the whole period. At roughly that time, I think, a DM event launched to replace Bendir Dale's appearance with what it is now. Within a month or two, Lyle had founded the Fist. He and the other hin would haunt around the area, greet visitors, talk, all that lovely stuff. Basically, they generated RP and gave something for other players to do in Bendir Dale besides trading with Jayek.
I'd also, on occasion, bug a DM to possess a priestess of Selune in Wharftown for Lyle's donation and, of course, his conversion way back when. I think I had broken at least 100 by the time I joined the DM team about six-months later.
Player initiative gets players noticed. Calling for an NPC to be possessed (for a purpose, not necessarily for a chat), getting other players involved generating roleplay, all of that should and will lead to DCs, provided it is constructive roleplay at work.
Except Cordor East, I think.

I can attest to that. Got a few this way, myself, with different DMs on different occasions.

I hate the idea of getting a DC when I call for a DM. It's what generally keeps me from doing it, despite the fact I've been a DM and posted many times that calling for one is *exactly* what you should do.
I prefer to get them when I'm doing something without knowing a DM is watching, rather then knowing they are. If I know they're there, I feel....dirty...if I get a DC.

Those are my thoughts too, but it's not as if I called DMs 24/7 to possess a NPC for me just because I want a DC.
Like Bobo said, it's RP with a purpose. Like the time I asked a DM (I think it was Bobo, but my memory is awful and I might be wrong) to possess the mage merchant at Underport so I could ask him if he could make me one "secret and shady" item. It was my IC way to make the request for my faction's item, which is currently on discussion. I made the first contact IC, and then I send a OOC request through a PM.
As long as you are acting IC with a purpose, there is nothing wrong with making such requests and getting DCs for it. If the interaction is too short, I also don't think a RP is due because there's only so much you can see during that moment and it will hardly be an outstanding display of your skill; that being said, if I don't get DCs for that I don't get angry or disappointed.
But the DMs have different criteria to give out DCs and some of them think that short request and the RP behind is still worth it.

Are you implying that DMs give DCs out too easily? I am not of the same opinion. Sometimes on this server, RP, any RP, is very hard to find. When a DM does find it, they are thrilled.
Some people have like, 1 DC per month if they're lucky. Others get 2 in one online session. I've known one outstanding player to top the record with 6 in one 24 hour period.
Those who RP and stay IC 100% of the time WILL get DCs. Those who never RP won't. Its that simple.
