Boss hunting
No, really - if you are bored, there's two causes most often. Either nothing is happening, or you're spending way too much time in game.

I log out.
The best solution.
Go out, hit a gym, go to pub, do some gardening or work related stuff. A few things that always pumps me up to log in again.

Boss hunt, another game, irl.

I think everyone has hit it on the head. Log out. Take a break for a while. Go play another game. Or if you are set or limited solely to NWN go poke around some other servers, which can provide inspiration for future RP here, or make a new character for kicks!
I usually play some different game, even non RPGs sometimes provide inspiration about what to do. Lately I've been playing "Banished" which makes me feel like building my own settlement on some server (which will never happen, but it is still nice idea ). Or watch something, go out etc.

Is it long-term/ frequent boredom? Take a couple days off and try a bit of self-inspiration. When are you most having fun and why? Are there any goals in any shape or form? Only you can make it fun for yourself.
Otherwise if it's just the odd day of having absolutely nothing to do, logging out and doing something else is probably a good idea as was pretty much suggested here. (Although I have a habit of AFKing and studying)

Ingame boredom? Ehh, I make new alts. Likely not the best solution, but... the truth.
When I feel meh about Amia, I do tend to investigate other servers, spending any amount of time looking at their forums or trying them out makes me appreciate Amia that much more.
Sometimes, I just don't feel like playing, or can't think of what my character should do... those days? I don't log in. Or, sometimes I do, and poke around to see if there's a new person or familiar character to bring me out of my funk.
Not sure if any of this helps, but... that's what I do.
When I'm bored In-Game: Park my toon somewhere with her book in hand, write her journal OOCly in Word, and keep one eye out for RP should someone pass by. When I'm bored by the game: Flip to a different game until the want to play Amia comes back~

I usually write item descriptions, make stuff in the toolset, make character concepts, or add to the word doc of requests and other ideas that I never get around to.
Or, like other people have said, take a break and do something else. Make sure the my PC's house is paid up through whenever, and don't worry about it for a while.

If there aren't any hunting parties to join, I'll just kinda sit around in a public area and wait for a while. Of course, I'll probably just log and do something else before too long.

Not that I log in much these days, but when I'm bored I go and find new people to role play with: if they don't entertain me, then I move on to find the next one and the next one etc.
I start breaking furniture until my neighbors call the police and then get into a pretty legendary brawl where I end up swinging from a chandelier until bandits show up andn flip a cop's car over and I have to save him from a fiery death. Then we have a, few beers (on him) and he serious the whole needing to arrest me thing under the rug.
Wednesdays man.

If I get bored IG I usually just switch to Guild Wars 2.
Or Skyrim.
Or hang out with my wife.
But seriously, haven't done school work in a long time.
School! Christ I have kids now! I play other games which my nephew tells me are old! Beyond that its anime, kids and my wife... not always in that order!
