Okay, I tried to look for this but couldn't get a definitive answer.

When the move is made to an EE server, what happens to all our characters and their stuff, etc?

That's answered in the FAQ for the switch to EE:

Are our characters going to be transferred over?

Yes, the server's character vault will be transferred over.
