If you change your diety and the domains you originally had are not listed in the new dieties domains, what happens then? anything?

After the hak change? I'd imagine that you would become Fallen.
It's my hope that with these new changes, deity changes become harder to obtain. Changing allegiences so quickly is simply not possible. It would require a fundamental change in who the character is, likely spurred on by some traumatic event followed by a long period of self-reflection. It simply wouldn't happen that a character is a cleric of Torm and then the next day is a cleric of Bane, or even Lathander or any of them.
There is also the situation from the god's point of view. While an evil god may try to whisk a cleric of a good god away by tempting them with powerful clerical magic, a good god probably wouldn't trust someone from the evil side so quickly. And a good god probably wouldn't want to upset another good god by taking his or her followers like that.

People already effectively do that Svensk.
It will likely encourage people to play other gods, as the domains are better balanced now. Personally I'm hoping to see more cleric of Tempus now.

pardon the hijack but this is related. so uh when we get a chance to see what these domains do? some of them i haven't the foggiest idea what they do. before the hack is in place or some time later?

Domains of tempus are weak. War domain is good, but strong domain, i dont like, stoneskin became useless in higher lvls. I think cleric weak in server in late lvl. Nobody depends of a cleric because raise death is sell, well i am main player, on server, that be ressurrestion with raise death, but i think that the price should be above. Where i can see about new domains systens?

Where i can see about new domains systens? Er clerics are one of the most powerful classes in the game. Stoneskin levels just the same as the arcane version, and is just as viable at higher levels. My cleric is a RP built one and she is still amazing while hunting. Trust me, people depend on clerics for a lot.

Yeah Clerics are one of those classes where people who know how to play the game can turn them into a freight train of death carrying smaller yet equally deadly freight trains and each of those have a ninja as a conductor. And the ninja is on fire.
People who just click default and feel good about voting on the other hand will find its very hard to piece anything worthwhile together as it involves rubbing more then two neurons together and will likely just default to RDD.
With no offence to fright trains, retarded people, neurons and RDD's. Also yes im glad the era of the Cleric of say...Light and Honesty and Iron craftwork somehow shoehorns an acceptable reason why they took Plant/Travel/Trickery is coming to an end and I hope to record its actual deathknell to play back over and over again each night before bed.

Uh wizards/sorcerers get both Stoneskin and Greater Stoneskin. Greater Stoneskin is the personal only spell. It's better, of course, but Stoneskin is still a good spell at high levels. However, when the new domains are in place Greater Stoneskin might become available to clerics, but I don't know for sure.

Every cleric will be able to change their domains once, so if you decide that a particular deity is not for you even after you've changed your domains once, you'll need a DM in order to change your domains again. You're already going to need one if you want to change deity after level 10 anyway.

I ask this as one of my PCs is most likely (pending approval) going through this right now, and has been carrying a fallen widget for quite some time, surely your not going to make me carry another? lol

At the moment you can be Fallen from the widget. That doesn't go away until the widget does.
With the HAK update, you can also gain the Fallen status without having the widget, because it's temporary for most clerics and goes away when they pick the right domains.
If you don't have the right domains AND you have the Fallen widget, both things have to be resolved to regain your casting abilities.
