I was wondering if the original ability scores of the shifter are added to the ability score bonuses of his different forms?

I will only answer for the new shifter forms.
No. They all have set scores.

so the only forms with set scores are the Amia added ones or is minotuar, the wyrmlng,etc included?

that was the only place I dident look because I thought they would only list the same information as the instruction manual does lol. So thank you for bringing that site to my attention
