Is there anything about the Minmir that's "common knowledge"? Who built it? Who owns it? Who maintains it?

The original Minmir Bridge didn't have lore for it afaik. I assume it was built by Cordor or Kohlingen to facilitate trade.
The later incarnation was rebuilt by Kohlingen after it was destroyed, and they currently own it and the immediately surrounding land, and maintain it as well.

How big is the bridge, I mean what can go underneath it? What is the easiest way to destroy it? How common sight are traders on that bridge, is there a steady flow of traders crossing it or..?

Re: the size, I'd imagine you kind of have to be a bit WYSIWYG there, yeah? So, you could swim under it, or get a rowboat or a canoe or maybe a small shallow barge under it, but it kind of looks to me like anything with a mast would have trouble. Just speculation.
Re: Winya, it's not exactly a city of merchants. Its trade with the outside world is fairly limited in scope and haphazard and individualistic in nature; there's not any sort of central Winyan trade authority that would be assembling or receiving regular caravans. What little the elves needs from humans, they get from Kohlingen. (Or so Kaithan has been advised by the City's business community in the past.) I'd think that Kohlingen, having thousands of times more mouths to feed, is a lot more dependent on overland commerce (which would be why they built and maintain the bridge in the first place).

Yup, small row boats and such can get under the bridge with no problem. Sailing boats, not so much. The bridge is a decent size in width. Enough to accommodate two passing trade carts of standard size comfortably.
The bridge is important to Kohlingen and Cordor most of all, but also to Bendir Dale.

Re Winya's trade position. There is trade between Winya and primarily Kohlingen mainly consisting of the luxury goods the elven produce. Elven wines, foodstuff, finely crafted chainmails, jewlery and naturally bows are all items among others exported to Kohlingen. As Lizzie touched upon though its mostly humans who travel to Winya to purchase goods from the elves and then return with the goods to Kohlingen. Other cities tend to follow the same pattern, local merchants travel to Winya to purchase the luxuruy products they desire and return to their local trading places to sell them, though by far margins Kohlingen remain the major trading partner. Winya on the other hand, despite its more self reliant and isolationist tendencies do have frequent contact with Kohlingen as its a major port which serves as connection hub to elves elsewhere in Faerûn and from time to time goods which can't be procured in Winya locally are purchased at the markets of Kohlingen. Though its important to state that little is organized officially within Winya Ravana, most is simply left to the individuals who wish to engage more heavily in trade.

It was Yaston who rebuilt it after Mylthar! That was his first work as an engineer! Aside that the bridge is a symbolical point of Kohlingen's legendary because that is the place where Nebessa, the sword saint of Tyr defeated a Cordorian councilor in a duel during the war between the two cities...but again, it is a legend
